Everything that goes into our beef is "organic"- the grassland, the water, the feed, etc. Independent agents certify our land, animals, processes and packaging facility and certification inspections are performed annually - at a minimum. And to take it a degree further, our processing facilities meet standards of cleanliness that are far more stringent than the standards for the conventional beef industry. And what happens if one of our organic calves gets sick? It is removed from the herd and treated for the illness, but it is removed from the organic program and will not be used for our beef. Why are The Organic Pacific Gourmet & Blackwings different than other Organic Beef Producers?

Conventional beef producers rely on fat content (marbling) to provide tenderness and flavor in a steak. However, by choosing certain breeds known for tenderness and flavor we ensure a great tasting steak without all the fat. We use breeds such as the South Devon, the Red Poll, Angus, and the Pinzsgauer to produce beef with less fat than typical USDA Prime beef.

Once we have the right cattle, the rest is in the ranching. We raise our herds in the most stress-free environment possible - naturally. And then, just prior to packaging and freezing, we age our beef 10-14 days, rather than the usual 48 hours.

The result? There's an objective test for tenderness called the Warner-Bratzler shear test. It gauges how hard meat is to cut. We test our beef to make sure it meets or exceeds the tenderness standards of traditionally processed beef. We won't sell a steak if it fails our testing.

The production of 100% Organic Beef requires land management practices that, by their very nature, ensure the range is kept in its natural state, free from pesticides and other chemicals common to modern agriculture.

Never - Blackwings does not permit any animal we raise or purchase to be administered hormones or growth additives.
 

WHAT IS THE DIFFERENCE BETWEEN ALL NATURAL, ORGANIC & 100% ORGANIC?

ALL NATURAL REFERRS TO NO ADDITIVES AND IS BASED ON TESTIMONY OF THE PRODUCER. ORGANIC MEANS THE PRODUCT COMES FROM AT LEAST 90% ORGANIC INGREDIENTS BUT 100% ORGANIC MEANS 100 % OF THE INGREDIENTS ARE ORGANIC. ANIMALS THAT ARE CERTIFIED ORGANIC MUST COME FROM ANIMALS THAT THE PARENTS WERE CERETIFIED RAISED ORGANIC AND RAISED FROM BIRTH ON ORGANIC LAND. THEY MUST BE FED ORGANIC CROPS. Will eating organic foods improve my health & how.

A recent study into organic vs, non organic foods showed that by adhering to a strickly organic food program any traces of herbicides will disappear from a childs body in 5 days. The controled study had children eat non organic food and traces of herbicides showed up in the blood stream. They were then put on a all organic program for 5 days and the herbicide traces disappeared. They then went back on a non organic program and the traces of herbicides reappeared.

Can you recommend some of the best ways to cook Bison?

Sure. Here are some of our favorites:

Skillet - Heat skillet on high heat. Add meat and sear 2 minutes on each side, then bake at 350 degrees until desired wellness.

Cover & Bake - Preheat oven to 250 degrees. Baste meat with sweet butter, olive oil or other preferred preparation. Cover and bake 35 minutes per pound. Internal temperature should be 125-135 degrees Fahrenheit.

Grill - Sear meat for 2 minutes per side with a high flame. Lower flame and cover 3 minutes per side or to desired wellness.
